Hershey's "Perfectly Chocolate" Chocolate Cake

2 cups sugar

1 3/4 cup all purpose flour

3/4 cup Hershey's cocoa

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 tsp pure vanilla extract

1 cup boiling water

 

Preheat oven to 350 degrees.  Grease and flour either 2 - 9 inch round pans or 13x9 pan, put either kettle on to boil for your 1 cup boiling water or boil 1 cup water in microwave so it is ready for step 3

1.  Combine dry ingredients in large bowl, mixing all together.

2.  Add to the dry the milk, eggs, oil and vanilla.  Beat on medium speed for 2 minutes.

3.  Quickly stir in boiling water, batter will be very thing.

4.  Pour into pans/pan and bake for 30-35 minutes until toothpick inserted in middle comes out clean.  Cool for 10 minutes then remove from pan.  If in 13x9 pan do not remove from pan!!

Frost with this:

Fudge Frosting

1 stick butter

2 cups sugar

3 oz (squares) unsweetened chocolate

2/3 cup milk

1/2 tsp salt

2 tsp vanilla

 

Melt butter and chocolate in saucepan over very low heat.  Add sugar, milk and salt and cook over medium heat until it comes to a boil, stirring constantly.  When it comes to a rolling boil stop stirring and boil one minute without stirring.  Remove from heat and place pan in bowl of ice water and beat with a wooden spoon until mixture thickens and cools.  Make sure your pan is elevated high on the ice so the water does not get into the pan.  You really could have mostly ice and a little water.  (you just want to cool the frosting and the pan down).  When thick, smooth and of spreading consistency (not too thick) add vanilla.  Pour on sheet cake (13x9) or frost with a knife on your layers.  Refrigerate immediately and until you are ready to serve.  It looks more like fudge as it gets cold.
