Apple Pie

 

Ingredients:

Crust –

2 2/3 cups flour

1 tsp salt

1 cup plus 2 tbsp shortening

8 tbsp cold water

 

Filling-

8 cups of peeled and thinly sliced apples

1 cup sugar

1 tsp cinnamon

¼ cup flour

Dash of salt

 

5 tsp butter

 

To make the crust:

Mix together 2 2/3 cups flour with 1 tsp salt.  Combine it with the shortening and blend it with a pastry blender until it is all mixed.  Add approximately 8 tbsp of cold water chilled in the fridge, one at a time, whipping with a fork between each tbsp added to judge consistency of the dough.  Stop adding water when the consistency seems right.  Separate the dough into 2 balls.  Sprinkle flour on both your pastry sheet and your rolling pin.  Roll out one of the balls of dough into a 10 in circle.  Flip pastry sheet over onto your pie plate and fit the dough to form your bottom layer.    Flour your pastry sheet and rolling pin once again and roll out the top layer of dough into a 10 inch circle.  Set aside.

 

To make the filling:

Peel approximately 8 apples.  Cut into sections and then very thinly slice them.  You will need 8 cups of the thinly sliced apples.  Mix the sugar, cinnamon, flour, and salt in a bowl.  Add the sliced apples and mix thoroughly.    Gently pour your apple filling into the pie plate.  Cut 5 tsp of butter and place them on top of the apple filling. 

 

Put your top layer of dough on and crease the edges by fluting them.  Cut thin slits into the top of your dough for ventilation.  Put your pie plate onto a cookie sheet or a layer of foil before putting into the oven to avoid spillage. 

 

You will need to bake the apple pie at 425 degrees for 45 minutes.  For the first 30-35 minutes, cover the outer edges of the crust with foil.  Remove for the remaining 10 minutes of baking.
